PRIVATE CHEF
Every summer for the last 4 years I’ve had the great honor and pleasure of being a part of directors, Brian Mertes and Melissa Kievman’s community enrichment project, on Lake Lucille, New City, NY. They open their home to a company of 30-50 professional visual and performing artists, produce an extremely rich and sensory example of Chekhov in a week. Their friends, families and lakeside community attend the daylong event that includes a community sponsored intermission picnic/swim and often runs into the dark of night. My role is to feed the company with food primarily from local organic farmers. This gets me to roll my sleeves up, dig in so as to prepare “clean” food for and with the entire company. Not only does this local community event unify us, it also raises money for communities across our nation that need Habitat for Humanity.
CATERING
Often, when I cater an event, it’s one that I’ve come to by “word of mouth”. The perspective client already knows that I’m a “soup to nuts” kind of event planner. Once the “theme” of the occasion is decided the invitations, décor, the food, activities, music, etc. all set the stage for a very dramatic and memorable occasion.
TEACHING
My cooking “classes” have always included bits of knowledge gleaned from Joshua Rosenthal’s many lectures given at the IIN. http://www.integrativenutrition.com. I’ve also enjoyed emphasizing the relationship between the natural beauty of the produce that we eat and the healthful benefits that we receive all wrapped up in the same package. Where does your food originate? What kind of energy are you transmitting as you prepare it? Are you covering an array of colors on the serving plate? If so, you are probably getting a good amount of minerals and vitamins as well. Are you eating your meal slowly? Are you conscious of how it arrived at your table?
inSeason CHEF
THE INSTITUTE FOR INTEGRATIVE NUTRITION defined my trinity! It provided a way for me to creatively live and think in a symbiotically integrated way. I could apply my eyes wide-open concept of how to be a steward to myself, my family, my world, and my universe. My family’s health and well being is a testament to the quality and benefits of the natural resources we have at hand… not to mention the beauty of it all! I have counseled, taught, cooked and catered inSeason. For years my media has been fresh, locally grown seasonal produce. My kitchen and table have been my office and studio. Feeding an outdoor community theater company of 50 for a week each summer is an expression of how it all comes together.
